With cooking I do the same. Before designing a single plate I spend days listening to you — who you are, what you love, what moves you. Then, and only then, I build the dinner that only you could wear. No meat: starters and first courses where fish is the guiding thread — the East meeting the West, earth and sea interpreted upon your character.
